
The Return of the Cookie Monster
Ingredients
3 cups almond meal
2 eggs
1/2 cup honey
1 1/2 cup chocolate chips
1 tsp baking powder
1 tsp salt
1 tsp vanilla essence
1/2 cup unrefined coconut oil
Combine the almond meal, baking powder and salt in a large bowl. Though the recipe calls for 3 cups of almond flour, I ran out of blanched almond flour so I used 1 cup of coconut flour and 2 cups of almond flour as I had some on me. But feel free to use almond meal ie. whole almonds ground to fine flour like texture in a mixie.. And don’t worry about the skin.
Combine eggs, honey and vanilla essence and beat with a hand mixer.
Combine wet and dry ingredients and mix well. Pour in coconut oil.
Now add the chocolate chips.
Put the drops of batter on a cookie sheet, pre heat oven to 180 degrees C, and bake for about 20 minutes.
And your primal chocolate chip cookies are ready!!
They taste almost like real cookies, but maybe next time I’l add some butter to make them more gooey..

What honey do you use? All I’ve seen in India is an abundance of sugar syrup masquerading as honey (including Dabur). Also, what is almond meal? And lastly, aren’t choco-chips cheaters?
For someone who’d hangout at Sweet Bengal on the weekends, this recipe sounds too good to be true.
Hi Carl. Unfortunately I haven’t found raw honey in India and everything you get here is definitely sweetened. I sometimes use a sweetener instead of honey like Truvia (which I get form crawford market). But I’m going to hunt for the best honey available and post it here on the comments board once I find it!
Almond meal I have got from the US previously but once I ran out I just dumped almonds into the mixer and pulverized it until it became flour like consistency. Slightly chunkier than say white flour but so what.
Chocolate chips are cheaters (unless you chop really dark chocolate into bits and use). In fact all primal desserts are cheaters. Everything in the baking and primal sweets sections are in some ways anti the whole primal philosophy all together, which is why you should stay away for awhile until you get used to the taste of real food completely.
But its WAYYYY better than alot of other things out there and it’s a compromise I’m willing to make. I mean its either this of chocolate chip cookies from subway or worse. So I’l take these, knowing fully well that I am cheating slightly but still staying as true as I can.
